CREAMY RICE PUDDING 
1 stick cinnamon, break in half
2 c. cooked rice
2 c. milk, divided
1/2 c. sugar
1/4 tsp. salt
1 egg, beaten
2/3 c. golden raisins
1 tbsp. butter
1 tsp. vanilla

Combine cinnamon stick, rice, 1 1/2 cups milk, sugar and salt in a heavy saucepan. Cook, stirring occasionally, 15-20 minutes, until thick and creamy.

Blend remaining 1/2 cup milk and beaten egg. Add to rice mixture. Cook 2 minutes longer, stirring. Add raisins, butter and vanilla. Take out cinnamon stick. Serve warm. Makes 4-6 servings.
