WHITE CHOCOLATE CHEESECAKE 
Crust:

1 stick softened butter
1/4 c. sugar
1/2 tsp. vanilla
1 c. all-purpose flour

Filling:

4 pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla
4 eggs
12 oz. white chocolate, melted and slightly cooled

Preheat oven to 325°F.

For crust, beat butter, sugar and vanilla until fluffy. Gradually add flour. Press onto a 9-inch spring-form pan; prick with fork.

Bake 30 minutes, until edges are golden.

For filling, beat cream cheese, sugar and vanilla. Add eggs one at a time, then add melted chocolate. Pour over crust.

Bake 1 1/2 hours or until center is almost set. Refrigerate 4 hours or overnight. Garnish as desired.
