IRISH APPLE CAKE 
1 c. oil
2 c. sugar
2 eggs
1 tsp. vanilla
1 tsp. salt
12 oz. pkg. butterscotch chips
2 tsp. baking powder
1 tsp. cinnamon
4 c. peeled & diced apples
2 1/2 c. flour
1 c. chopped nuts

Cream oil, sugar, eggs and vanilla. Add flour, salt, baking powder and cinnamon; mix well. Add apples, fold in nuts. Pour into greased and floured 13 x 9 x 2 inch pan. Sprinkle chips evenly over the top. Bake at 350 degrees for 50 to 60 minutes. May be sprinkled with confectioners' sugar after cooled.
