FRESH TOMATO SAUCE 
3 tbsp. olive or vegetable oil
1 chopped onion
2 garlic cloves, minced
2 tbsp. chopped fresh basil or 2 tsp. dried basil leaves
4 lb. soft tomatoes diced or chopped (about 5 c.)
1 tsp. salt
1/4 tsp. pepper

In a large skillet or saucepan heat oil and saute garlic and onion. When soft add other ingredients. Bring to a boil and simmer until tomatoes are very soft. Serve over pasta.
