POTATO STUFFED SAUSAGE 
1 lb. smoked sausage, cut into 4 equal pieces
2 tbsp. green onion, chopped
1/2 c. Cheddar cheese, shredded
Mashed potatoes for 4
1 tsp. prepared mustard

Heat oven to 350 degrees. Cut sausage pieces lengthwise almost thru to bottoms. Spread open; place cut side up in rectangular pan, (13 x 9 x 2 inches). Prepare mashed potatoes as directed on package for 4 servings. Stir in onions and mustard. Spread over sausage pieces; sprinkle with cheese. Bake until cheese is melted, 10 to 15 minutes. 4 servings.

VARIATIONS: Substitute 1/4 cup sweet pickle relish for the onions and mustard. Or substitute 1/4 cup dairy sour cream and 2 tablespoons grated Parmesan cheese for the onions and mustard.
