SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar
2 tsp. vanilla
2 tsp. baking soda
2 c. shredded zucchini
3 c. flour
1 c. crushed pineapple, drained
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. chopped nuts

Beat eggs, oil, sugar and vanilla until light. Stir in zucchini and pineapple. Add all dry ingredients together and add to egg mixture until just blended. Bake in 2 (9"x5") pans at 350 degrees for 1 hour. Cool in pans 10 minutes. Turn out on rack to finish cooling.
