CHEDDAR TURKEY CASSEROLE 
1 c. packaged precooked rice
2 tbsp. instant minced onion
1/2 of 10 oz. pkg. frozen peas (1/2 c.)
4-6 slices of cooked turkey or 2 c. diced
1 can condensed cheese soup
1 c. milk
1 c. finely crushed cheese crackers
3 tbsp. butter

Prepare rice. Add instant onion to boiling water. Put rice in greased 10 x 6 x 1 1/2 casserole. Sprinkle with peas, then cover with turkey. Blend soup and milk; pour over turkey.

(When I use diced turkey, I toss this mixture to combine ingredients.)

Combine cracker crumbs and butter, put on of top casserole. Bake 30-45 minutes covered in 350 degree oven. Remove cover for last 5-10 minutes to brown topping a bit.
