CHEDDAR TURKEY CASSEROLE 
1 c. precooked rice
2 tbsp. instant minced onion
1/2 (10 oz.) pkg. frozen green peas, thawed
4-6 slices cooked turkey or 2 c. diced turkey
1 can condensed cheese soup
1 c. milk
1 c. finely crushed Ritz crackers
3 tbsp. butter, melted

Cook rice according to package directions, adding minced onion to water. Fluff cooked rice with fork and spread in buttered baking dish, 10 x 6 x 1 1/2 inches. Sprinkle with peas, then cover with turkey. Blend soup and milk, pour over turkey. Combine crumbs and butter and sprinkle over casserole. Bake at 350 degrees for 35 minutes.

Makes 4-6 servings.
