SAUSAGE CASSEROLE 
1 lb. sausage
1/2 c. celery, if desired
1/4 c. chopped onion
2 1/2 c. cooked rice
1 can mushroom soup
1/2 c. green beans or peas
Slices of cheese

Cook and crumble sausage. Remove from skillet and cook onion and celery in the skillet until done. In a large casserole dish mix sausage, onion, celery, rice and soup. Salt and pepper to taste and mix well. Gently stir in green vegetable, smooth out and add slices of cheese. Bake at 350 degrees until bubbly. This recipe may be frozen before adding the cheese.
