LACY OATMEAL COOKIES 
1 stick butter
1 c. sugar
1 c. quick oats
1 tsp. vanilla
3 tbsp. flour
Scant 1/2 tsp. salt
1/4 tsp. baking powder
3/4 c. chopped nuts or coconut or some of both
1 egg, beaten

Melt butter in medium pan and let cool. Mix dry ingredients together; set aside. Add vanilla to butter, then dry ingredients and egg. Line 3 cookie sheets with foil, shiny side up. Place about 12 cookies on a pan about 3 inches apart (about 3/4 teaspoon dough for each cookie). Bake 10-12 minutes at 350 degrees. Reverse pans for even baking. Let cool 5-10 minutes in pan, then place on rack for further cooling.
