NANA'S POLISH COFFEE CAKE | |
1/2 c. scalded milk 1 yeast cake 2 c. flour 1/2 c. sugar 1/2 c. butter 3 eggs 1/2 tsp. salt 1/4 tsp. mace 1/4 tsp. nutmeg 1/4 tsp. vanilla 1 grated lemon rind Dissolve the yeast in warm milk. Mix with 1 tablespoon sugar and 1/2 cup flour. Beat until well blended. Let rise in warm place until double in bulk, about 1/2 hour. Cream butter and sugar. Add eggs beaten with salt and rind (beat eggs until very light), mace, nutmeg and flour. Add to yeast mixture and beat well about 10 minutes with electric mixer. Butter tube pan or bundt pan. Pour in batter - let rise until triple in bulk, about 1 1/2 hours. Bake 40 minutes in 350 degree oven. Remove from pan and pour sauce over top and sides. SAUCE: 1/2 c. sugar 3/4 c. orange juice or apricot juice or 1/2 c. water 1/2 c. rum 1 tsp. lemon juice Cook sugar and liquid for 5 minutes. Add lemon juice and rum. |
