ZUCCHINI CASSEROLE 
4 med. zucchini squash, sliced thin
2 lg. onions, sliced thin
1 c. chopped green pepper
1 c. chopped celery
1 regular size can of tomatoes
1 tsp. Italian seasoning
2 bay leaves
Salt and pepper

Cook squash, onions, green pepper, and celery in 2 tablespoons of olive oil in a frying pan until tender. Add tomatoes, Italian seasoning, bay leaves and salt and pepper. Simmer for 30-45 minutes covered. Remove cover and cook until almost all of the liquid has evaporated. Pour into a casserole dish and cover with Parmesan cheese. Zap in the microwave for 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
