IMPOSSIBLE PUMPKIN PIE 
1 1/2 c. sugar
1 c. Bisquick baking mix
4 tbsp. butter
2 (13 oz.) cans evaporated milk
4 eggs
2 (16 oz.) cans solid pumpkin
5 tsp. pumpkin pie spice (or cinnamon)
4 tsp. vanilla

Heat oven to 350 degrees. Grease 9"x13" oblong baking dish. Beat all ingredients until smooth, 1 minute in blender on high or 2 minutes with beater. Pour into dish. Bake until knife comes out clean, 50 to 55 minutes. Garnish with Cool Whip if desired. Serves 8 to 12.
