PINK COCONUT CANDY 
2 c. sugar
2/3 c. water
3 tbsp. light corn syrup
2 c. flaked coconut
Pinch of salt
1 tsp. vanilla
2 drops red food color

Place sugar, water and corn syrup in a 2-quart glass batter bowl. Combine well. Microwave on High for 12 minutes or until mixture reaches 248 degrees on candy thermometer (firm ball stage). Stir in coconut and microwave on High 3 minutes, or until mixture reaches 248 degrees again. Beat in salt, vanilla and food color. Drop by teaspoons onto waxed paper. Let cool and store in an air tight container. Yield: 36 pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
