BANANA NUT BREAD
4 3/4 c. flour
3/4 c. sugar
1 tsp. salt
2 pkg. yeast
1/3 c. evaporated milk
1/3 c. water
1/3 c. butter
2 eggs
1 c. mashed bananas
1/2 c. pecans (chopped)
2 tsp. cinnamon
2 tbsp. melted butter

In a large bowl, mix 1 1/4 cups flour, 1/2 cup sugar, salt and yeast.

Heat milk, water and butter to 120 degrees. Add to above mixture; beat 2 minutes at medium speed. Add eggs, banana and 1 cup flour; beat high speed 2 minutes. Stir in pecans and enough remaining flour to make a stiff dough. Knead 8-10 minutes. Set in greased bowl; grease top. Cover, let rise until doubled, about 1 hour.

Punch dough down. Divide in half and shape into loaves. Place in greased loaf pans. Cover; let rise until doubled, about 1 hour.

Mix remaining sugar with cinnamon. Brush loaves with melted butter; top with sugar mixture. Bake at 375 degrees for 25-30 minutes. Cool.
