TROPICAL BANANA BREAD 
1/2 c. Crisco shortening
1 c. sugar
2 eggs, well beaten
1 c. mashed bananas (2 to 3 med.)
1/2 c. dairy sour cream
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. chopped pecans or walnuts

Heat oven to 350 degrees. Grease and flour 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan.

Combine Crisco and sugar in large bowl. Beat at medium speed of electric mixer until creamed. Add eggs, bananas and sour cream. Beat until well blended.

Combine flour, baking soda and salt. Add at low speed of electric mixer. Mix just until blended. Stir in nuts. Spread in pan.

Bake at 350 degrees for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan to cooling rack. Cool completely before slicing. 1 loaf.

I've been making this recipe for years. No other banana bread recipe that I've tried has come even close. It never fails to please. I use butter and make it without nuts.
