DATE PIN WHEEL COOKIES 
1/2 c. butter
1/2 c. brown sugar
1/2 c. white sugar
1 egg
1/2 tsp. vanilla
2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt

1 lb. dates, chopped fine
1/2 c. sugar
1/2 c. water
1/2 c. nuts

Cookie dough: Cream together sugars, butter, egg and vanilla until creamy. Sift together flour, soda and salt. Mix all until smooth. Chill dough for several hours.

Filling: Cook over low heat dates, sugar and water. Stir constantly until mixture boils and thickens slightly. Cool slightly. Just before using add 1/2 cups finely chopped nuts.

To complete cookies, divide dough in half. Roll out on a well floured board to 1/4 inch thick. Spread with half the filling. Roll up in a jelly roll fashion. Repeat remaining half the same way. Chill several hours. Slice 1/4 thick. Bake at 350 degrees until done.
