BROKEN GLASS TORTE
3 pkgs. Jello (red, green, yellow)
1 pkg. unflavored Jello
1 c. pineapple juice
2 tbsp. sugar
2 c. heavy whipping cream
1/2 c. sugar
1 tsp. vanilla
2 dozen graham crackers, crushed
1/2 c. soft butter
1/2 c. sugar

Dissolve each package of flavored Jello separately in 1 1/2 cups boiling water. Place in shallow pans. When Jello is firmly set, cut into small cubes.

Heat 1 cup pineapple juice, add 1 envelope plain unflavored gelatin which has been dissolved in 1/4 cup cold water. Add 2 tablespoons sugar to this mixture and set aside to cool. Prepare crust.

Mix 2 dozen crushed graham crackers, 1/2 cup soft butter and 1/2 cup sugar. Line large spring form pan with 2/3 of the crumb mixture.

Whip 2 cups heavy whipping cream, adding 1/2 cup sugar and 1 teaspoon vanilla. Fold the pineapple juice mixture into whipped cream. Blend the colored Jello cubes carefully into the pineapple whipped cream mixture. Turn into springform pan and top with remaining crumbs. Chill 6-12 hours or until firm. The cut slices give you the broken glass effect.
