ZUCCHINI, HAMBURGER AND TOMATO
CASSEROLE
 
1 lb. ground beef
2 med. onions
1 c. chicken broth
1 c. chopped tomatoes (1 can)
3 med. zucchini
1 tsp. sugar
Salt and pepper, to taste
Thyme and basil, to taste
3/4 c. instant rice

Sauté onion and ground beef until browned. Add chicken broth and tomatoes. Add zucchini, sugar, salt, pepper, thyme and basil. Add rice and continue simmering until zucchini is tender.
