MEGAN'S CHICKEN CHILI (THE
BEST!)
 
Forget about silverware with this Chili - just use the Fritos scoops!

1 tsp. olive oil
1 onion, diced
2 yellow bell peppers, diced
4 garlic gloves, chopped

Sauté the above ingredients. Set aside.

1 roasted whole chicken (pulled apart)
1 (28 oz.) can stewed tomatoes, undrained
1 (5 oz.) can diced chilies (with juice)
1 (15 oz.) can kidney beans, drained
1 (15 oz.) can cannellini beans or any other white bean, drained
1 (15 oz.) can black beans, drained
1 (8 oz.) can tomato paste
4 cups V8 vegetable juice
2 tbsp. balsamic vinegar
1 tbsp. paprika
1 tbsp. cumin
1 tbsp. chili powder
2 tsp. sugar
1/2 tsp. salt
1/4 tsp. cloves

Note: I usually double of all the spices depending on the flavor.

Throw it all together in a Crock-Pot or Dutch oven till its hot.

TOPPINGS:

dairy sour cream
cheddar cheese
Fritos scoops

Top each serving with sour cream and cheddar cheese. Enjoy!

Serves a lot. At least 10!!
