GREEN HERBED RICE | |
3/4 c. chopped fresh parsley 1/4 c. chopped fresh basil 2 tbsp. chopped green scallion tops 1/4 c. olive oil 3 c. cooked long grain rice, heated Salt and fresh ground pepper to taste 1 tbsp. unsalted butter Freshly grated Parmesan cheese (for garnish) Put parsley, basil, and onion tops in food processor. With machine running, add just enough oil through food tube to make a smooth puree. Toss pureed mixture into hot rice, with salt, pepper, and butter. Serve immediately, or keep warm in 225 degree oven. Sprinkle with cheese before serving. Serves 4. |
