LIGHT APPLE CHEESECAKE 
1 tbsp. graham cracker crumbs
1 c. low fat cottage cheese
2 (8 oz. each) pkgs. lite cream cheese, softened
2/3 c. flour
2 tbsp. flour
4 egg whites
2 tbsp. skim milk
1/4 tsp. vanilla extract
2 apples, peeled and chopped
Cinnamon and sugar

Lightly grease bottom of 9 inch springform pan. Sprinkle with crumbs ( or if you wish you can make a regular graham cracker crust). Spread apples over crust, and sprinkle on cinnamon and sugar to taste. Blend cottage cheese in blender until smooth. Then beat cottage cheese, cream cheese, sugar and flour until well blended. Add eggs, one at a time, mixing well after each. Blend in milk and vanilla and pour into pan. Bake at 325 degrees for 45-50 minutes, until center is almost set. Loosen rim of pan and remove when cool. Chill.
