AL'S GREEN SALAD 
1 lg. garlic clove, crushed
1/2 tsp. salt
1/2 lg. head of lettuce, shredded in sm. pieces
2 or more tomatoes, cut in sm. pieces
6 green olives, cut up
8 black olives, cut up
1 tbsp. parsley flakes
2 stalks celery, cut sm.
Dash of oregano
1 tbsp. lemon juice
1 tsp. mint leaves, crushed
2 slices sharp white cheese, diced
2 slices sharp yellow cheese, diced
1 green pepper, diced (optional)
2 tbsp. grated Parmesan cheese
2 tbsp. grated Romano cheese
Wesson oil

Crush garlic with salt in large wooden salad bowl. Combine all ingredients, dampen with oil and stir. Place in refrigerator for 20 to 30 minutes to "age", stirring 2 or 3 times, to reach full flavor. Do not add radishes or cucumbers unless garden fresh.
