RHUBARB BARS 
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. butter
1 egg, beaten
1 tbsp. milk
2-3 c. rhubarb, cut up
1 (3 oz.) pkg. strawberry or cherry Jello
1 c. sugar

Combine flour, baking powder and salt. Cut in butter - set aside 1/2 cup for topping. Add egg and milk to main mixture; mix well. Pat mixture into an 8 inch square pan.

Place rhubarb on crust - sprinkle with Jello. Add 1 cup sugar to reserved topping mixture. Sprinkle over fruit. Bake at 350 degrees for 45 to 50 minutes. Serve warm with ice cream or serve cool as bars. Cut into bars before completely cool.
