6 to 8 lg. potatoes, peeled, cooked & mashed
1 (8 oz.) can sour cream
2 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped chives or green onion tops
1/4 c. butter
1 (10 oz.) pkgs. frozen chopped spinach, thawed and well drained
1 (4 oz.) c. Cheddar cheese, shredded

In a large bowl, combine all ingredients except cheese. Spoon into a greased 2 quart casserole. Bake, uncovered at 400 degrees for 15 minutes. Top with cheese and bake 5 minutes longer.
