ITALIAN CREAM CAKE 
2 c. sugar
1 c. shortening
1 stick butter
5 eggs, separated
1 tsp. baking soda
1 tsp. vanilla
1 1/2 tsp. salt
1 c. buttermilk
2 c. flour
1 (3 1/2 oz.) can flaked coconut
1 c. walnuts, chopped

Preheat oven to 350 degrees. Grease and flour three 9 inch pans and line with wax paper. Cream sugar, shortening, and butter. Add egg yolks. Stir soda, vanilla, and salt into buttermilk, then add alternately with flour to creamed mixture. Beat egg whites until stiff. Fold coconut, nuts, and egg whites into other ingredients. Pour into pans and bake for 25 to 30 minutes. Cool completely before icing.

FOR ICING:

1 (8 oz.) cream cheese
1 box powdered sugar
Walnuts for garnish
1 stick butter
1 tsp. vanilla

Cream the cream cheese and butter; add powdered sugar and beat until fluffy. Beat in vanilla.
