GRATED CARROT MEAT LOAF 
2 slices firm white bread, broken into pieces
3/4 c. milk
2 1/2 lbs. lean ground beef
3 eggs
2 lg. carrots, finely shredded
2 tbsp. prepared horseradish
1 env. onion soup mix (approximately 1 1/2 oz.)
1/4 c. catsup
3 tbsp. brown sugar, firmly packed
2 tbsp. Dijon mustard

Whirl bread in a blender to make about 1 1/2 cup fine crumbs. In large mixing bowl, pour milk over bread crumbs and let stand until absorbed. Mix in ground beef, eggs, carrots, horseradish and onion soup mix. Pat into a greased 5 x 9 inch loaf pan. For topping mix together catsup, brown sugar and mustard and spread evenly over the top. Bake uncovered in a 350 degree oven for 1 1/2 hours. Makes 8 to 10 servings.
