SPICE CAKE | |
3/4 c. shortening 1 1/2 c. sugar 3 eggs 1 3/4 c. flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 tsp. nutmeg 1 tsp. cinnamon 2 tbsp. cocoa 3/4 c. sour milk or buttermilk 1 tsp. vanilla 1 tsp. lemon extract 1/2 c. coarsely cut up nuts Cream shortening and add sugar gradually, cream thoroughly. Blend in 3 well beaten eggs. Sift flour once before measuring, then sift the flour, baking powder, soda, salt, spices and cocoa all together and add to creamed mixture, alternately with sour milk. Blend in flavoring and nuts. Pour out into 2 well greased and floured layer pans and bake for 30 minutes in moderate oven, 350 degrees. Cool and ice. Icing for Spice Cake: 1 egg yolk; optional 3 c. confectioners sugar 1 1/4 tbsp. cocoa 1 tsp. cinnamon 1 1/2 tbsp. hot coffee or blend with milk or can cream to desired consistency |
