SAUSAGE AND EGG CASSEROLE | |
1/2 lb. French bread, crusts trimmed, cut into 1 inch cubes 1-1/2 c. shredded medium - sharp cheddar cheese 2 lb. pork sausage 16 beaten eggs Snipped fresh chives Lightly grease 9 x 13 inch oven - proof glass baking dish. Arrange bread cubes evenly in bottom of dish. Brown sausage in heavy large skillet over medium heat, breaking up with fork, for about 15 minutes. Sprinkle sausage over bread, using slotted spoon. Pour eggs over sausage. Top with cheese and then chives. Cover with foil and refrigerate overnight. Preheat oven to 350 degrees. Remove foil. Bake casserole until eggs are set, 30 to 35 minutes. Cool 5 minutes before serving. Serves 8 to 10. |
