FRUIT MUFFINS 
3 lg. eggs
1/2 c. butter
2 1/2 c. unsweetened crushed pineapple
3/4 c. pineapple juice
2 1/2 c. wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 c. unsweetened coconut (optional)
1 c. raisins
3 pkgs. Sweet 'n Low
1 tsp. baking soda

Beat eggs, softened butter, and pineapple juice together. Add flour, soda, baking powder, and cinnamon. Beat well, then add pineapple, coconut, raisins, and Sweet 'n Low. Bake at 350 degrees for 20-25 minutes. Makes 24 muffins (or 12 large ones). This can also be baked in mini loaf pans. Each muffin = 1/2 bread, 1/2 fruit, 1/2 fat.
