BETTY'S CARROT CAKE 
1 1/2 c. salad oil
2 c. sugar
4 eggs (1 c. Egg Beaters or whites of 8 eggs)
2 c. flour (whole wheat flour of oat bran may be sub. for 3/4 c. flour)
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3 c. grated carrots
1 c. nuts

Beat together the oil, sugar and eggs. Sift the dry ingredients and add to the oil mixture. Add the carrots and nuts. Mix well. Bake in either a 9 x 13 inch pan or a tube pan (will be crunchier in 9 x 13 inch pan) at 350 degrees for approximately 1 hour or until done. Is good plain or with sour cream icing.
