ZUCCHINI BREAD 
1 c. salad oil
3 eggs, slightly beaten
2 c. sugar (1 white, 1 brown)
2 c. grated zucchini (raw)
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 c. pecans
1 c. raisins

Blend well in large bowl salad oil, eggs, sugar, zucchini and vanilla. Stir in (do not beat) the flour, soda, baking powder, salt and cinnamon. Stir in pecans and raisins. Spoon batter into 2 well greased 8 1/2 x 4 1/2 x 2 5/8 inch loaf pans. Bake 350 degrees for 1 1/2 hours or until done.
