ZUCCHINI CAKE 
3 c. grated zucchini squash
4 eggs
3 c. granulated sugar
3 c. flour
1 c. walnuts
2 tsp. baking powder
1 1/2 c. corn oil
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt

Mix squash, sugar, oil and eggs. Combine remaining dry ingredients and mix in. Grease and flour a tube pan. Bake at 350 degrees for 1 hour. Let pan cool before turning out.

FROSTING:

Combine 1 (3 ounce) package cream cheese, 1/4 cup soft butter, 2 cups powdered sugar, and 1 teaspoon vanilla. Frost cool cake.
