ZUCCHINI CAKE 
3 c. flour
3 tsp. baking soda
1/2 tsp. salt
2 c. sugar (white or brown)
1 c. salad oil
1 (8 oz.) can crushed pineapple
1 tsp. vanilla
2 c. grated zucchini
1 1/2 c. chopped nuts
3/4 c. coconut
2 eggs

Mix dry ingredients. Add zucchini and oil. Add remaining ingredients. Beat by hand. Mix well. Pour into greased and floured 13x9 inch pan. Bake at 350 degrees for 1 hour. Cool and frost.

FROSTING:

8 oz. cream cheese
1/2 c. butter
1 lb. powdered sugar
1 tsp. vanilla
