PINEAPPLE ZUCCHINI CAKE | |
3 c. flour 1 tsp. salt 1 1/2 tsp. cinnamon 3 eggs 2 c. sugar 2 c. grated zucchini 1 tsp. baking soda 4 tsp. baking powder 1 c. oil 2 tsp. vanilla 1 (8 3/4 oz.) can crushed pineapple, drained 1 c. chopped walnuts 1 c. white raisins, soak in cup boiling water, then drain Cream eggs. Add sugar and oil. Sift flour, salt, cinnamon, baking powder, and soda. Stir in vanilla, pineapple, and zucchini. Add nuts and drained raisins. Spoon into a greased and floured bundt pan. Bake at 350 degrees for 50-60 minutes. Use toothpick tests for doneness. |
