PINEAPPLE ZUCCHINI CAKE | |
3 eggs 2 c. sugar 2 tsp. vanilla 1 c. oil 3 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. nutmeg 1 c. crushed pineapple, drained 2 c. zucchini, shredded 1/2 c. raisins 1/2 c. pecans Mix eggs, sugar, vanilla and oil; beat well. Add the dry ingredients, mixing well. Add rest of the ingredients and mix well. Bake in a greased 9 x 13 inch pan at 325 degrees for 50 minutes. Frost with cream cheese icing. |
