SPICY PINEAPPLE ZUCCHINI CAKE 
Beat 3 eggs. Add 1 cup oil, 2 cups sugar and 2 teaspoons vanilla. Stir in 2 cups shredded zucchini and 1 can crushed pineapple (8 1/4 ounces) well drained. Combine 3 cups flour, 2 teaspoons baking soda, 1 teaspoon salt, 1 1/2 teaspoons cinnamon, 1/2 teaspoon baking powder, 3/4 teaspoon nutmeg, and 1 cup chopped walnuts and 1 cup raisins, stir all together. Makes 2 loaves. Grease and flour two 5 x 9 inch loaf pans. Bake at 350 degrees for 1 hour or until done.
