CARROT NUT MUFFINS 
3 c. all purpose flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 c. white sugar
1/4 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. ginger
1/2 tsp. allspice
2 eggs
3/4 c. corn oil
3/4 c. milk
1 tsp. vanilla
1 tsp. salt
2 1/4 c. grated carrots
3/4 c. walnuts

Preheat oven to 375 degrees. Blend flour, soda, baking powder, sugar and spices. Combine eggs, milk, vanilla, oil, salt, carrots and walnuts. Beat until fluffy. Add liquid mixture to dry ingredients and stir until combined. Do not over mix. Put batter evenly into muffin tins. Bake 20 to 25 minutes.
