CARROT NUT MUFFINS 
1 c. white sugar
3/4 c. oil
2 eggs
1 tsp. baking soda dissolved in 1 tbsp. warm water
1/2 tsp. salt
1 tsp. baking powder
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 c. walnuts
1 c. shredded or grated carrots

Beat sugar, oil, eggs and baking soda and water and vanilla; mix well. Add flour, baking powder, salt and mix until moistened. Stir in the grated carrots and nuts. Bake at 375 degrees for 15 to 20 minutes.
