CARROT-NUT MUFFINS 
1 c. sugar
3/4 c. oil
2 eggs
1 tsp. baking soda
1 tbsp. water
1 tsp. vanilla

Mix sugar, oil and eggs. Add baking soda, then mix with water and vanilla. To above, add:

1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 c. grated raw carrots
1 c. nuts, chopped
Raisins (optional)

Put in muffin cups (about 24). Bake 12-15 minutes at 375 degrees.
