CARROT BAKE 
9-10 lg. carrots
1/4 c. chopped green pepper
1/4 c. chopped onion
4 tbsp. butter
2 tbsp. flour
1 c. milk
2 tbsp. sugar
1/2 tsp. salt
1 tbsp. butter
1/2 c. soft bread crumbs

Peel and steam carrots until tender. Microwave if you like. Mash the steamed carrots.

Saute green pepper and onion in the 4 tablespoons butter. Stir in the flour, milk, salt and sugar. Cook until thickened. Add the mashed carrots and put in a greased casserole.

Melt the butter and toss the bread crumbs until golden. Spread over the carrots. Bake at 350 degrees for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
