CHERRY DELIGHTS 
3 eggs
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
1 tsp. lemon juice
1 tsp. vanilla
24-30 vanilla wafers
24-30 cupcake liners
1 can cherry pie filling

Beat first 5 ingredients until fluffy. Line muffin pans with liners. Put 1 vanilla wafer in bottom of each liner. Add 1/3 to 1/2 tablespoon of mixture into each. Bake at 375 degrees for 15 minutes. Let cool. Top with cherry pie filling (or pie filling of choice). Refrigerate cream cheese desserts. They will remain fresh for up to 3 days in refrigerator.
