OLD TIME PEACH COBBLER 
3 c. peaches
3 tbsp. cornstarch
3 c. sugar
3 c. water
2 c. flour
1/2 c. Crisco
1/4 c. sugar
1 tsp. salt

Mix cornstarch with 3 cups sugar, add 3 cups water, bring to a boil and let boil for 1 minute. Add fruit. Remove from heat.

Mix flour, Crisco, sugar and salt. Add just enough cold water to form ball. Roll dough on floured board about 1/8 inch thickness. Cut into strips.

Place 1/2 of fruit in baking dish top with 1/2 pastry strips; repeat, sprinkle with sugar, dot with butter. Bake at 400 degrees until top is brown.
