ALMOST MEXICAN CASSEROLE 
12 oz. corn tortilla chips, crushed
1 lb. sm. curd cottage cheese
1 lb. carton sour cream
3/4 c. salsa
2 sm. cans sliced black olives
1 sm. can diced Ortega chilies (mild)
2 lb. ground beef
1 lg. onion, chopped
2 c. prepared spaghetti sauce
16 oz. cheese (use Cheddar or Monterey Jack or both), grated
3 tbsp. butter

Grease bottom and sides of a 4 quart casserole with butter. Set aside. Mix cottage cheese, sour cream, salsa, chilies and olives in a bowl. Set aside.

Saute onion in large frying pan until yellow using butter. Push onions to side and fry beef until it loses pink color. Add spaghetti sauce to meat and heat briefly. Spread a thin layer of corn chips in bottom of casserole. Add a layer of cottage cheese mixture, then a layer of meat sauce, then a layer of cheese. Repeat layers. Top with cheese, then chips. Bake covered at 350 degrees for 45 minutes to 1 hour.
