MEXICAN CASSEROLE 
2 lb. ground beef
1 med. onion, chopped
1 lb. Velveeta cheese (or you can use Cheddar), grated
Salt to taste
Chili powder to taste
2 cans chili beans
1 pkg. tortilla chips
1 can cream of mushroom soup
1 can rotel tomatoes and chilies
Pepper to taste

Cook ground beef; drain and season with salt, pepper, and chili powder to taste. Grease a 13 x 9 inch baking dish; line with chips. Layer cooked beef, onion, beans, and cheese; continue layering until all ingredients have been used up. Pour the cream of mushroom soup mixed with the rotel tomatoes over the top. Add another layer of chips. Bake at 350 degrees for 45 minutes to 1 hour. Cover top with cheese. Cook 15 more minutes or until cheese is melted.
