MICROWAVE FISH 
4 (6 oz.) catfish fillets
2 tbsp. butter, melted
1/8 tsp. garlic powder
1 tbsp. lemon-pepper seasoning

Brush fillets with butter; arrange in a 12x8x2 inch baking dish, placing meatier portions of fish toward outside edges of dish.

Combine garlic powder and lemon-pepper seasoning. Sprinkle over fillets. Cover tightly with heavy duty plastic wrap; fold back a small edge of wrap to allow steam to escape.

Microwave at medium high (70% power) for 4 1/2 minutes. Rotate dish and rearrange fish in dish. Cover and microwave at medium high about 4 1/2 minutes or until fish turns opaque. Let stand, covered, 3-5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
