SPECULAAS (Dutch Cookies) | |
1 c. sugar 1 c. brown sugar 1 c. butter, softened 2 eggs, beaten 2 tsp. vanilla 3 1/2 c. flour 2 tsp. baking soda 1/4 tsp. ground cloves 1 tsp. allspice 1 tsp. cinnamon 1 tsp. nutmeg 1/8 tsp. salt Cream the sugars with the butter and vanilla. Blend in the beaten eggs and beat well. Sift the flour with the rest of the dry ingredients and beat into the butter mixture. Divide dough into 2 equal portions and shape into long oval rolls, about 2 1/2 x 1 1/2 inch in diameter. Wrap in waxed paper and chill in refrigerator overnight. Cut into 1/8 or 1/4 inch slices (the thicker slices will be chewier and the thinner ones will be crunchy). Place 1/2 inch apart on a greased cookie sheet. Bake in preheated oven, 350, for 10-15 minutes. My favorite!! |
