6 c. flour, sifted 2 c. sugar 1 lb. shortening, Crisco or Spry 4 tsp. baking powder 1 tsp. salt 1 tsp. nutmeg 1/2 c. milk + 2 tbsp. 3 eggs, slightly beaten 1 tsp. vanilla 1 c. currants Pour hot water over currants, then dry them. Beat the eggs, add the milk and vanilla and add the currants. Let stand while you are mixing the other ingredients. The currants will puff up by that time. Mix the shortening and dry ingredients like you do for pie dough, then add the egg mix. Roll out like rolled cookies, only thicker about 1/4" or more. Cut with cookie cutter. Don't use too much flour when rolling. Bake like pancakes on electric griddle or frying pan on low heat about 300 degrees about 5 minutes then turn and bake other side about 5 minutes. Makes 6 dozen. |
