HONEY OAT PRUNE BARS 
12 oz. (about 2 c.) pitted prunes
2/3 c. orange juice
1/2 c. nuts, chopped
3/4 c. butter, softened
3/4 c. packed brown sugar
1/4 c. honey
1 egg
1 c. flour
1 1/2 c. oats
1/4 c. wheat germ (optional)
1 tsp. baking soda
1/2 tsp. salt

In a blender, process prunes and orange juice until almost smooth, pulsing on and off and scraping sides down. Stir in nuts and set aside.

In a large bowl, cream butter, sugar and honey. Beat in egg.

Combine flour, oats, wheat germ, baking soda and salt to blend thoroughly. Spread nearly half of the flour mixture evenly on the bottom of a greased 9x13-inch baking pan.

Spread with reserved prune mixture to within 1/2 inch from edges. Crumble the remaining batter over the top to cover prune mixture. Pat down gently.

Bake in 350°F oven for 30 to 35 minutes until browned and springy to the touch.

Cool on wire rack, cut into bars.

Makes 48 bars, 1x2 inches each.
