WALTER BRAUNDHLER'S OAT BRAN
BREAD
 
2 c. fruit juice (apple cider works well)
1 c. raisins
1 c. oat bran
1 c. rolled oats
1 c. flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 c. finely chopped pecans

Put fruit juice and raisins in saucepan and bring to boil; reduce heat and simmer 5 minutes. Remove from heat and let cool. Grease a 9x5 inch loaf pan and set aside.

Mix together the oat bran, rolled oats, flour, baking soda, cinnamon, nutmeg and pecans in a large bowl. Add the cooled juice mixture and combine well. Pour into prepared pan and bake at 350 degrees for 40-50 minutes. Remove from oven and cool in pan 10 minutes. Remove bread from pan and finish cooling on wire rack. Can be served warm or cold. Wrap in foil and store in refrigerator.
